Low Carb French Onion Soup

Ingredients
Onions- 4 large- any type, (yellow, red, sweet or white), sliced thinlyGarlic 3 clovesFat Free Chicken Broth 6 cupsLow Fat Swiss or Gruyere Cheese 8 thin slicesMushrooms 2 cups thinly slicedButter 2 tbspOlive Oil 2 tbsp
Directions
Makes 4 x 2 1/4 Cup Servings

Warm Butter and oil in a large sautee pan at very low heat. (About 20- 25% of the available power of the burner)

Add onions and garlic.

Slowly cook until the onions begin to caramelize, stirring often. (This will take 15-20 minutes, but is time well spent)

While onions are cooking, slice the mushrooms in 1/8 inch slices. Seperate in to 4 equal portions.

When onions/garlic are caramelized, add the chicken stock, and turn up the heat!

Season soup with salt and pepper as required, and simmer 5 minutes until piping hot.

Prepare 4 oven proof bowls and turn the oven on to broil.

Ladle the hot soup in to the 4 bowls. Top with the mushrooms, then the cheese, and place in the oven.

Bake until the cheese is brown and bubbly.

GREAT with a tossed salad!
