Garlic Chicken with Tomatoes & Olives

Ingredients
2 skinless boneless chicken breasts 1 cup canned tomatoes chopped1/2 cup black olives chopped or halved2 tbs chopped rosemary6 cloves garlic pressed4 tbs olive oil25 oz dry white wine
Directions
1. Place chicken between 2 sheets of plastice wrap. Using a meat hammer, tenderize. Pound until about 1/2 inch thick.

2. Heat olive oil in a large skillet over a medium heat.

3. Briefly cook chicken in oil, browning on both sides.

4. Add garlic and rosemary, continue cooking until garlic is soft.

5. Pour wine intro pan, and cover pan with lid.

6. Bring to a slight boil and simmer for 5 minutes.

7. Add tomatoes and olives to the pan; continue cooking, covered, for approximately for 10 minutes.

8. Cut each breast in half.

Makes 4 Servings.
