Ingredients
Directions
1 c rolled oats1 jar carrot baby food4 +/- packets stevia2 eggs1 scoop Genuine Health vanilla protein1 tea. baking powder1/2 cup greek yogurt
I used a hand blender for this so I only had to clean one bowl. I cooked them in one of those electric little cupcake makers because I was far to lazy to heat the oven.
Pulse the oats to make a flour.
Add the baking powder, protein powder and stevia.
Add baby food, yogurt and eggs.
Mix well.
I had to add some water to make a cake like batter.
Pour into the baking dish of your choice. They do not expand much, so fill 'er up.
Bake until done.
Mine took 8 minutes in the cupcake maker.
Serving Size: makes 8 rather flat cupcakes
Number of Servings: 8
