One-Skillet Mexican Beef & Rice Casserole

Ingredients
1 teaspoon canola oil 1 large white or yellow onion, chopped 1 pound extra lean ground beef or turkey 1/2 teaspoon ground cumin1 teaspoon chili powder1/2 teaspoon paprika2 cups prepared brown rice1 cup salsa 1 (10-ounce) package fresh spinach1/2 cup shredded low-fat Cheddar cheese
Directions
Place a large skillet over medium-high heat. Add the oil, then the onion. Cook for three minutes, until the onions start to soften.
Add the meat and the spices and cook until the meat is no longer pink, about 10 minutes. Use the back of a spoon to break up the meat as it cooks.
Stir in the rice and salsa, then reduce heat to medium and place the spinach on top. Cover and cook for two minutes, until the spinach has wilted. Stir in the cheese and serve.


About 1 1/4 cups per portion.

    I thought this was really good and super easy! I had browned the beef previously and frozen it so I just thawed it in the fridge the night before and then heated it. I didn't have Ready Rice so I used frozen rice from Whole Foods. I heated that up in the microwave and added it. Enjoyed it a lot! - 2/18/13

Better yet, find a different source for your recipes & spare the rest of us your rants. I avoid pre-packaged foods, too, but if the recipe sounds good, I find a way to work around it. - 2/22/13

    Very good! I used regular brown rice cooked separately in rice cooker. I plan to try using ground venison next time. The lower fat and sodium count will enable a little larger serving size. Bet it would be good with rotel tomatoes instead of salsa.

    I doubled all the spices, and added 1 tsp diced garlic with the onion, 1 tsp black pepper, and 1 tsp cayenne pepper. I also used my own precooked brown rice. Only managed to fit in half the spinach in my skillet.

    I cook my whole grain brown rice in my rice cooker in advance, then portion it out so that it is enough for my large family and freeze it. All I have to do is thaw it or put it in the microwave for a couple of minutes and it is ready to go. - 2/25/13

    Costco sells organic quinoa & brown rice w/garlic packages by Seeds of Change. I used this package & 1 package of Jennie-O Italian turkey, & 1/2 a lg red onion. All else the same. It came out AMAZING & filling. I hate cooking/prepping - pretty much the whole 9 yards. But this was easy & worth it. - 1/26/16

    I couldn't resist commenting! This recipe looks wonderful, and I will make it this weekend. I do not understand the comments about packaged rice. The recipe calls for "prepared rice", which tells me it is rice I cooked up ahead of time. No where does it say use pre-made rice! - 1/16/14
