Simple Vanilla Creme Burlee

3 large eggs2 cups of heavy Cream.5 cup sugar1 tsp of vanilla extract1 tsp of sugar per serving
Heat heavy cream to near simmer. In seperate bowl, combine 3 eggs and sugar. Stir eggs and sugar until mixed. Slowly stir in warmed cream. Pour through fine sieve. Add 1 tsp of vanilla extract. Pour into Rankins that have been placed in a water a 2" pan. Bake in oven at 250F for 1-1.5 hrs. Goal is for sustard to be solid but still have a little jiggle to it when shook. Cool to room temp and then cover each bowl with clear wrap and refrigerate. When ready to serve, sprinkle ground sugar on top and melt sugar with hand held torch.
