Ingredients
Sauce: soy saucepeanut butterhoneyrice vinegarpeanut oilsesame oilwater siracha chili sauceground chicken breastgarlicgingersalt & pepper waterchestnuts peanuts* optionalquinoa* optionallettuce leaves
Directions
cook 1 lb ground chicken breast in a pan until done. Add some salt, pepper, garlic, and a little ginger while cooking.

in a separate bowl, mix ingredients for sauce.
2 tbs soy sauce
1 tbs peanut butter
2 tbs rice vinegar
2 tbs honey
2 tbs peanut oil
1 tbs sesame oil
3 tbs water
*siracha chili sauce to your spice liking

microwave it for 1 minute to melt the peanut butter and mix until smooth

chop water chestnuts [and peanuts if you'd like] (i used 1 can water chestnuts per 1 lb of chicken)

1 cup of cooked quinoa

add water chestnuts, quinoa and sauce mixture to pan with cooked chicken and cook for a few minutes.
