Quinoa Chili

Ingredients
1 yellow onion diced1 tbsp of olive oil to saute onion1 can of black beans1 can of kidney beans1 can of diced tomatoes1 cup of red quinoa (Cook quinoa separately before adding other ingredients. I used the red quinoa because it looked like ground beef/meat.)
Directions
Wash and cook quinoa. I like to put 1 cup of washed quinoa in a pot with 1 3/4 c water. Bring to a boil and turn heat down to a simmer. Cover and cook for 15 minutes. Let sit for 5 minutes then fluff with a fork.

While your quinoa is sitting for those 5 minutes you will want to saute your diced onion with the oil. After fluffing the quinoa add it to the pot with the onions and saute together for about 3 minutes. Add the black beans, kidney beans and diced tomatoes. Stir up then add 1 tbsp of chili powder and 1tsp of ground cumin. Stir to mix up the spices. (Optional: I also added 1 tbsp of red chili pepper flakes to make give it a little kick.)

Let simmer for about 15 minutes. You may serve it with some cheese, sour cream, corn chips, etc.
