Ingredients
2 eggs1/4 cup spinach1/4 cup diced mushrooms1/4 cup shredded cheesecooking spraysalt & pepper to taste
Directions
whisk eggs until well blended and pour into a pan on medium low heat, sprayed with cooking spray

allow eggs to set a minute and then add on other ingredients, cover pan to wilt the spinach

fold omelet and enjoy
