Turkey and Veggie Quesadillas

1/2 Lb extra lean ground turkey1 small onion, chopped1/2 C bell pepper, chopped1 C Kale, finely chopped1/2 C fat free shredded Mozzarella1/4 C shredded Fiesta Blend cheeseSalt and pepper to taste3 Flatout Multigrain with Flax Flatbread
Sautee onions and bell pepper until onions are translucent. Add ground turkey, cooking until the pink is gone, breaking up clumps during cooking. Add kale when turkey appears to be done, and cook about 5 minutes more or until cooked down. Add salt and pepper, if desired, and mix well.
Spoon vegetable and turkey mixture into 3 tortillas or flatbreads. Divide up cheese and sprinkle on top. Fold flatbreads and grill on each side for about 5 minutes. Serve with salsa, if desired.
Serving Size: 3 large servings of one folded flatbread or 6 small servings
