Baked Pintos and Rice

3 cups cooked rice (or 1 cup raw rice, cooked)1 16 oz. jar salsa, as hot as you like1 15 oz. can pinto beans, rinsed and drained.
Preheat oven to 350. Spray a casserole dish. In a mixing bowl, mix all three ingredients together. Spoon into casserole dish. Cover and bake for 30 minutes or until hot. Makes about 5 cups total, or 4 servings of 1-1/4 cup each.
NOTE: You may make this with leftover rice (for example from Chinese Take-out) or you may use 3 cups of cooked brown rice for better nutrition.
