Chicken Tomato Florentine Crock-Pot Soup

Ingredients
1 pre-cooked rotisserie chicken2 - 14 oz. cans chicken broth1 extra large can tomato puree1 - 14 oz. can diced tomatoes2 c. fresh baby spinach leaves1 small onion, diced1 c. baby carrots, sliced1 clove garlic, minced1 whole zucchini, sliced and quartered2 stalks celery, sliced2 T. parsley2 T. basil2 T. oregano
Directions
Remove chicken from the bone, set aside in a bowl and refrigerate until needed (freeze the amount not used in this recipe)

Chop all vegetables and add all ingredients, except chicken, in crock-pot

Simmer on low for 8 hours or high for 6 hours

Add chicken during last 10 minutes of cooking to heat through

Serving Size: Makes approx. 10 - 1 cup servings
