Heather's lentil soup

2 tablespoons olive oil1 medium onion - chopped4 cloves fresh garlic/minced1 1/2 cups sliced mushrooms4 celery stalks - cut into 1/4 inch slices4 medium carrots - cut into 1/4 slices8 cups vegetable broth3 cups lentils3 tablespoons curry powdercoarse black pepper
Add 2 tablespoons olive oil to heated 6 quart Dutch oven. Saute onions until translucent. Add garlic - continue to saute for one minute. Add 2 cups vegetable broth to onions and garlic. Add celery and carrots. Bring to a mild boil - simmer for 10 minutes. Add remaining vegetable stock and lentils. Cover Dutch oven. Simmer for approximately 40-50 minutes - stirring frequently. Consistency will be similar to split pea soup. Shorten cooking time for firmer lentils.
