Zucchini Medley

Ingredients
8-10 fresh zucchini, small to medium2 yellow onionsthree 14.5 oz.cans fire roasted diced tomatoesthree 15 oz.cans cannellini beans (white kidney beans), drained and rinsed1 1/4 cups shredded mozzarella cheese
Directions
Using a food processor, slice zucchini and onions. Put them in a casserole dish or two. Add 1.5 cans of tomatoes and 1.5 cans of beans to each casserole dish. Bake at 350 for about 45 minutes.Stir once or twice during cooking. When cool, divide into ten containers, top with 1/8 c. cheese and freeze.
