Roses Veggie Omlet

Ingredients
5 baby carrots shredded6 cherry tomatoes cut in half5 sugar snap peas strings removed and sliced1 large whole egg2 egg whites from large eggs1 Tablespoon oilsalt and pepper to taste
Directions
Prepare veggies, add oil to skillet and heat, beat whole egg and egg whites together and pour in skillet. Cook omlet until almost done. Add veggies, fold omlet over veggies and finish cooking eggs. Salt and peeper to taste.
