Edamame and Quinoa stir fry

3 cups cooked quinoa1 bag shelled edamame1 tbl canola oil1/2 yellow or white onion, diced1 cup peas and carrots mix3 eggs, scrambled1 large clove of garlic4 tbl soy sauce3 tbl stir-fry sauce of your choice4 green onions, chopped*optional: other veggies
Cook quinoa, edamame, and egg separately and set aside.
In large pot or wok, saute onions, garlic, peas, and carrots until onions are translucent. Add in quinoa, edamame, green onions, and sauces and cook on low for a couple of minutes more or until hot.
Serving Size: Makes 8 servings
