Potato and Leek Cakes with Bleu Cheese dressing

Ingredients
Cooking Spray1/2 cup diced leeks3 cups shredded peeled baking potato (about 1 lb.)1 1/2 Tbsp. all-purpose flour1/4 tsp. salt1/4 tsp. black pepper1/4 cup egg substitute
Directions
Put shredded potato in a sieve, gently squeeze to remove excess water. Add potato, flour, salt, pepper and eggs to leek in bowl, stir well. Heat pan to medium high, coat with cooking spray. Divide potato mixture into 8 equal portions. Cook 4 at a time, 5 minutes each side or until golden brown. Repeat proceedure with remaining 4 patties. Serve with sauce.
