Chicken Minestrone adapted from Body For Life

Ingredients
Olive Oil, 2 tbsp Louis Rich Turkey Bacon (1 slice), 2 serving choppedOnions, raw, 1 medium (2-1/2" dia) choppedCelery, raw, 2 stalk, medium (7-1/2" - 8" long) choppedGarlic, 4 cloves 1 Bay LeafZucchini, 1 cup, sliced *Beans - Cannellini (White Kidney) - Bush's Best, 1 cup Beans, red kidney, 1 cup *Campbell's low sodium chicken broth, 6 cup Water, tap, 2 cup (8 fl oz) Chicken Breast (cooked), no skin, 1.5 unit (yield from 1 lb ready-to-cook cubedDarielle Pasta, Low Carb Pasta, Fusilli, 3/4 cup, 1 serving *Green Giant Cut Green Beans, can, 1 cup
Directions
Heat oil in large pot and add Canadian bacon. Saute for a few minutes. Add onions, zucchini, celery, garlic and bay leaf. Saute for 5 minutes. Add broth and water. Bring to a boil and add chicken. Boil for 10 minutes. Reduce heat to medium-high and add pasta and green beans. Boil for 8 minutes. Serve with grated parmasan cheese.
