2 zucchini grated,5 cup crumbled feta cheese2 large eggs.5 cup onions chopped fine.25 cup raw quinoasalt and pepper to taste
Whiz the eggs and quinoa in the blender. Grate the zucchini, lightly salt and drain for about an one half of an hour. Mix eggs, quinoa and feta, onions and zucchini in a bowl. Heat non-stick pan sprayed with cooking spray or a little oil. Make 3-4 inch pancakes. Cook with lid on for a few minutes, flip and cook the other side. Allow to cool slightly to firm up. These can be eaten warm or cold.
