Smoky Acorn Squash Soup

1 tbsp olive oil 1/4 cup onion2 cloves of garlic, minced1 large acorn squashed (baked or microwaved until tender) 15 grape tomatoes, chopped1 tsp cumin powderchipotle powder to taste (or chipotle in adodo)2 cups chicken stock 2 cups skim milk salt and pepper to taste
Prepare acorn squash. (I did 12 minutes in the microwave, but you can boil or bake too).
Sautee onion and garlic in olive oil. Add tender squash and tomatoes. Cook until the tomatoes start to break down. Add cumin and chipotle powder. Stir to combine well. Add broth and milk. Simmer for 15 minutes. Season to taste. Blend to desired consistency.
