Tilapia Veracruz

Ingredients
4 (6-ounce) tilapia fillets 4 tsp canola oil1/2 teaspoon ground cumin 1/4 teaspoon salt 1/4 teaspoon ground red pepper 1/4 cup chopped fresh cilantro 1/4 cup bottled salsa 1 (16-ounce) can black beans, drained & rinsed1 (14.5-ounce) can diced no-salt added tomatoes, drained 4 lime wedges
Directions
Heat a large non-stick skillet with 4 tsp canola oil over medium heat. Sprinkle fish with cumin, salt, and pepper. Cook fish about 3-4 minutes per side, until opaque.

Combine cilantro through diced tomatoes. Serve fish with the salsa mixture and lime wedges.
