Spiced Cedar Planked Salmon with Pineapple Salsa

Ingredients
Salmon: 1.5 lb wild salmon filet 1/2 Tbsp brown sugar* 2 tsp chili powder 1/4 tsp ground cumin 1/4 tsp salt pinch cayenne pepper cedar plank, soaked for at least 1 hour Salsa: 2/3 cup fresh pineapple (diced small) 1/3 cup diced green onion (green and white parts) 1/3 cup finely diced red bell pepper 1 minced cayenne chili (or 1 serrano or jalapeno) 3 Tbsp chopped cilantro
Directions
Mix ingredients for salsa, set aside. Mix spices for salmon in a small bowl, then rub the spice mixture onto the salmon.

Drain cedar plank, place on a hot grill. When the plank begins to pop, flip it over, then place salmon (skin-side down) on the plank. Cover grill, and cook for 10-15 minutes, or until salmon flakes with a fork. Remove salmon from plank, then slice into four pieces.

Serve salmon with pineapple salsa on top.
