Confetti French Lentils

Ingredients
2 tbsp olive oil2 medium carrots, shredded2 celery stalks, shredded1 medium onion, grated2 tsp kosher salt1.25 c French lentils
Directions
Heat oil in heavy pot over medium heat
Add carrots, celery and onion and salt.
Cook, stirring occasionally for 5 minutes
Stir in lentils
Add 3.75 cups boiling water and bring lentils to a boil at once.
Reduce heat to low, and simmer, stirring occasionally for 25-30 minutes. Do not drain excess liquid. Serve with slotted spoon.
