Almond flour, 2.5 cup Baking Soda, 2 tsp Table salt, 1 tspCinnamon, ground, 1 tsp Honey, 2 tbsp Flax Seed Meal (ground flax), 3 tbsp water 6 tbspCarrots, raw, 2 cup, grated (remove)Apples, fresh, 1 large (3-1/4" dia) gratedCoconut Oil, 0.5 cup (remove)Vanilla Extract, 2 tsp (remove)
Serving Size: 12 muffins
Mix flour, soda, salt and cinnamon. Mix flax and water, let sit 2 minutes. Add carrots and apples to dry mixture and combine. Mix flax with oil and vanilla extract, then combine with the rest of the ingredients. Batter will be thick. Spoon into greased muffin tin and bake for 20-30 minutes at 350 F.
