Stir-Fried Bok Choy

2 bunches bok choy (basically, 1 bunch per person)1 slice ginger1 T lite soy sauce1/2 t. sugar, to taste1/8 cup watera drop or two of sesame oil1 T olive oil (for stir frying)
Serves 2, 1 bunch per person
Wash bok choy and drain. Separate stalks and leaves. Cut stalk diagonally and cut the leaves across.
Heat wok and add oil. When oil is ready, add ginger and stir-fry briefly for about 30 seconds, until ginger is aromatic. Add bok choy (adding stalks before leaves). Stir in soy sauce and sugar, stir-fry on high heat for 1 minute.
Add water, cover wok and simmer for about 2 minutes. Stir in sesame oil and serve.
