Chicken and Brown Rice Soup

Ingredients
1 Tbsp Olive Oil100 grams carrot, diced100 grams celery, diced1 onion, diced8 oz chicken breast, diced100 grams broccoli, diced1 liter chicken stock50 grams brown rice4 cups water
Directions
Heat stock pot on stove. Add olive oil. Once warmed, combine carrots, onion, celery, and chicken. Once chicken is cooked, add remaining ingredients. Cook until rice is done.

Serving Size: Makes 8 servings, approx 325 grams each
