Mushroom Burger

Ingredients
1 sm onion finely copped1 1/2 lb mushrooms6 baby carrots grated1/2 c quick oats1 tblsp oregano1/3 c fresh parsely chopped2 large eggs whisked1/4 c mashed potatoes or 3/4 c bread crumbs
Directions
saute finely chopped onion in olive oil about 3-4 min, add dash pepper, red pepper and other desired spices
add mushrooms and continue to cook until mushrooms change color; while mushrooms are cooking place rest of ingredients in bowl; add mushrooms when done and shape into patties; cook on stovetop or grill until patties have formed nice crust and center has changed color-place swiss cheese on top and serve on bun with desired condiments.
