1 cup frozen shredded hash brown potatoes3 large eggs1/3 c each chopped onion, green or red bell pepper1/2 c. shredded carrotsSeasoing of your choice
Pre-heat olive oil in small skillet. Add potatoes and cook as directed on pkg.
Whisk eggs until blended.
Place chopped veggies over potatoes, pour egg over and make sure evenly distrubuted.
Cook until eggs are ste.
May sprinkle grated cheese over when serving if desired.
Serving Size: Makes two large-ish servings for mid=morning brunch
