Kale pesto

Ingredients
2 cups raw kale, stems removed1/3 cup olive oil1/4 cup sunflower seeds, with salt added1/4 cup parmesan cheese, gratedJuice from 1 lemon 2 anchovy fillets (optional)2 garlic clovesSalt to tasteWater
Directions
Put all ingredients except water into a food processor and begin processing. Add water slowly until the pesto is a paste-like consistency and is blending well (probably 1/4 to 1/3 cup water). Process until smooth, pausing to scrape down sides of food processor as necessary.

Serving Size: Makes about 8 servings of 2 tablespoons each
