Skillet salsa chicken

Ingredients
1 small onion, diced3 boneless skinless chicken breast halves, cubed1 jar salsa, whatever your taste preferencesalt & pepper to tastecumin, chili powder to taste
Directions
Dice chicken and season well with salt, pepper, cumin and chili powder.
Spray large, deep skillet with cooking spray. Over low heat, sweat the diced onions. Before the onions turn brown and crispy, raise heat to medium and add the diced, seasoned chicken. Saute until browned on all sides. Add one jar salsa, stir well. Cover and simmer for an additional 20 minutes. Serve with rice or risotto.
