1 pound ground turkey1/3 cup chopped green pepper1/3 cup chopped red pepper2 cups salsa3/4 cup frozen corn2 tbsp water6 corn tortillas (6 inches), halved and cut into 1/2 inch strips3/4 cup shredded reduced fat cheddar cheese5 tbsp fat free sour cream
Makes 5 servings with 1 cup meat mixture and 1 tbsp sour cream.
In a large skillet cook beef and pepeprs over medium heat until meat is no longer pink; drain. Stir in salsa, corn and water; bring to a boil.
Stir in tortilla chips. Reduce heat; cover and simmer for 10-15 minutes or until tortillas are softened. Sprinkle with cheese. cover and cook 2-3 minutes longer or until cheese is melted. Serve with sour cream.
