Quick Shrimp Rogan Josh

Ingredients
1 cup diced onion1 tsp dried ginger1 1/2 Tbsp minced garlic1 Tbsp madras curry powder1 tsp tumeric1 tsp garam masala1/4 tsp cayenne1/2 tsp salt1 (14 oz) can of crushed tomatoes1 cup fat free plain greek yogurt2 lbs peeled shrimp
Directions
Place a large pot over medium heat. Add the onions, sauté for 3 minutes. Then add all the dried spices, except salt and stir into the onions. Next add the ginger and garlic—sauté another 1-2 minutes.

Add the tomatoes, 1/2 tsp. salt and water. Stir in the yogurt. Simmer for 20-25 minutes. Add the shrimp to the curry pot. Stir them in and allow them to cook for 3-5 minutes—until pink. Taste for salt. Serve with rice.
