Dukan Diet Mocha Chocolate Oat Bran Muffins

Bob's Red Mill High Fiber Oat Bran Hot Cereal (1/3 cup dry, 1 cup prepared), 1.50 cup (remove)Cocoa, dry powder, unsweetened, 0.25 cup (remove)Egg, fresh, 5 large (remove)Yogurt, Stonyfield Farm fat free plain (6 oz), 0.75 cup (remove)*Splenda, 24 tsp (remove)Vanilla Extract, 1 tsp (remove)*baking powder, 4 tsp (remove)1/2 tsp. salt1/4 tsp. espresso powder
Preheat oven to 350. Prepare a muffin tin using paper muffin cups, then spray the paper cups with baking spray or coconut oil spray.
Mix together all dry ingredients (oat bran, cocoa powder, Splenda, Stevia, baking powder, espresso powder and salt) in a medium bowl. Beat eggs in a large bowl until frothy, then add yogurt and vanilla and mix until creamy. Add in dry ingredients and mix until combined. Fill muffin cups 2/3 full. Bake for 18 minutes or until a cake tester comes out clean.
