Cranberry-Nut Waffles

Ingredients
1/3 C Hi-Maize Resistant Starch1 1/4 C Cultured low fat buttermilk3/4 C all-purpose flour2 medium eggs1/4 C canola oil1 1/4 tsp baking powder1/2 tsp baking soda1/4 tsp salt1/3 C dried sweetened cranberries, chopped1/3 C walnuts, chopped
Directions
1. Combine all ingredients in a mixer.
2. Mix on low speed for approximately 2 minutes or until batter is uniform.
3. Cook on waffle iron until golden brown. 

Serving Size: Makes approximate 8 waffles or 4 Belgian waffles.
