Group 1:2 cups pumpkin puree1/2 cup packed brown sugar1/4 cup honey1/4 cup canola oil1/4 cup water2 eggs1 teaspoon vanilla_________________________________Group 2:1 cup whole wheat flour1/2 cup oatmeal2 teaspoons baking powder1 teaspoon pumpkin pie spice1/8 teaspoon nutmeg1 teaspoon cinnamon1/2 teaspoon salt_________________________________Group 3:1/4 cup raisins1/4 cup chocolate chips
1. pre-heat oven to 375*F. Grease muffin tin, or use paper liners.
2. Combine Group 1 ingredients in large mixing bowl, mix until just combined (do not over mix!)
3. In a separate bowl, combine Group 2 ingredients then gradually mix into the large mixing bowl until just combined (if using electric mixer, mix on low speed). Stir in Group 3 ingredients.
4. Fill prepared muffin tin three fourths full.
Bake for 18 to 20 minutes, or until muffins test done. Cool and enjoy!
