Baked Ham, Egg, and Veggie Cups

Ingredients
Ingredients:4 slices ham1 tablespoon pesto1/3 cup diced bell pepper1/3 cup diced mushrooms (crimini)1 cup liquid egg whites (or 4 eggs)1 teaspoon oregano1 teaspoon soy sauce1/8 teaspoon salt1/8 teaspoon ground black pepper1/4 teaspoon chili garlic sauce (optional if you like spicy)1/4 cup grated swiss (to taste)
Directions
1. Preheat oven to 400 degrees. Spray 4 muffin tin cups w/cooking oil

2. Spread pesto on the center portion of each slice of ham (a little less than 1 teaspoon per slice). Line 4 individual muffin cups w/ham.

3. Evenly divide bell pepper and mushrooms into ham cups

4. In a small mixing bowl (or a liquid measuring cup works well because it has a pour spout) combine remaining ingredients besides cheese. Pour mixture evenly into ham cups and top with grated swiss.

6. Bake for 18-20 minutes or until egg whites are firm yet fluffy, enjoy!
