High Fiber Raisin Bran Muffins

Ingredients
1 c. whole wheat pastry flour1/4 c. unbleached or all purpose flour2 tsp. baking soda1/2 c. unsweetened applesauce1 tsp. vanilla extract1 egg1 egg white1 apple, chopped1/3 c. quick cooking oats1 tsp. cinnamon1/3 c. brown sugar1 c. skim milk2 c. raisin bran cereal
Directions
In a large mixing bowl, combine all dry ingredients. In another bowl, combine the wet ingredients and stir to combine. Add the wet ingredients to the dry and mix just until moistened. Spoon the mixture into paper lined muffin cups. Fill each one about two thirds full. Bake for 30 to 35 minutes, or until a wooden pick inserted in the center ofa muffin comes out clean. let cool. Enjoy!
