Rutabaga Hash Browns

1 medium rutabaga, peeled2 small shallots, thinly sliced1 clove garlic, minced1 T olive oil
Peel rutabaga then cut into chunks and feed into food processor with the shredding attachment. If you don't have a food processor you can use a hand grater.
Slice scallions and mince garlic. Heat olive oil in a large skillet (cast iron is great if you have one). Put the scallions and garlic into the hot skillet and saute for 1 minute. Add the shredded rutabaga, stir well, then let cook without touching for a minute or so.
Stir again and let cook without touching. Continue to do this for about 7 minutes until the mixture is golden.
Serving Size: Makes two 3/4 cup servings
