Koubideh

Ingredients
2 lb ground beef1 yellow onion2 t cumin, toasted1/2 T salt1/4 c parsley (fresh)1 t pepper
Directions
Makes 8 large koubideh, each serving one person. Feel free to scale the recipe down. Great alternative to outdoor barbeques of hamburgers and hot dogs!

Grate the onion (use box grater or grater attachment on your food processor) and put into large bowl.

Toast cumin in a small pan for 1-2 minutes, then crush or grind (lightly) via mortar or other means. Add to bowl.

Chop fresh parsley and add to the bowl.

Place ground beef into food processor and process in 2-4 second pulses until smooth and comes together.

Place meat and the rest of the ingredients into the bowl and knead together by hand until well combined. Form into oblong patties (say 1x4) that are fairly flat. You should end up with 8 or so patties.

Refrigerate patties for at least 1/2 hour (up to about 8 hours). Then lightly oil your grill or grill pan and cook on medium high heat, flipping once, until cooked through.

Serve with dilled rice (basmati mixed with fresh dill and some lemon juice) and enjoy!
