sweet potato (3 small, cubed)butter (i used blue bonnet)garliconionchicken brothground corianderground gingerground cinnamonskim milklight cream cheesesalt & pepper to taste
saute the chopped garlic and onion in the butter. Add chicken broth and bring to a boil. Add cubed sweet potato and cook at a gentle boil until potatoes are soft and break apart easily. add spices.
I have a handheld emulsifier that I used at this point, but you can use a blender or food processor if you don't have one. After blending the potatoes, I added the milk and cream cheese and stirred until melty and combined.
Serving Size: makes about four 1-cup servings of soup
