Slow Cooker Turkey Taco Stew

Ingredients
1 large onion, chopped1 15 oz can black beans1 15 oz can kidney beans1 15 oz can corn1 8 oz can tomato sauce29 oz diced tomatoes w/chilis1 1.25 oz packet low sodium taco seasoning1.07 lb turkey breast cutlets (4)
Directions
Mix everything together in a slow cooker except turkey. Lay turkey on top and cover. Cook on low for 6-8 hours or on high for 3-4 hours. 30 minutes before serving, remove turkey and shred. Return turkey to slow cooker and stir in. This is good eaten with cheese, sour cream, or tortilla chips.

    Awesome recipe. I took it to a pot luck and everyone raved about it. For my own tastes (which run a little spicier) I throw in 3 or 4 Jalapenos and a serano or two. - 1/13/09

    Fantastic. We put chips on a cookie sheet, put stew on top with cheese and heated in oven for a few minutes. Then put the sourcream on top. My son cleaned up the kitchen so that he could hide the leftovers and take them back to college. This is one of my new favorites, easy to make. Thanks you! - 10/6/08
