4 Cups BeansWater1 tsp salt (aprox)
This can be done a a slow cooker after the first boil just fill with water and leave it all day to cook. The most important thing in this recipe is make sure the pot doesn't boil dry.
Sort and rinse beans. Put in a pot large enough to hold beans plus water. Cover beans with enough water to cover beans with at least 2 inchs of water. Bring to a boil, cook at a boil for 1 hr, then strain and rinse again. Put back in pot and cover with water at least twice as much as before bring to a boil then lower to simmer. Cook untel beans are tender aprox. 2 hrs. Make sure beans don't boil dry keep adding water. Salt to tast then serve. You can strain them and use them as a side dish, put them in tacos or burittos, or keep the juice with them and serve as a soup served with tortillias. You can top with cheese and sour cream if that tickles your fancy.
This makes a great "planned" left overs. I like to make a quick chillie by adding 1 can of tomato sauce, my favorite salsa and what ever meat I have left over in the fridge. I've used left over stake, chicken, hamburger and turkey. Then simmer for about 30min and serve with totillas.
This makes at least 8-10 1 cup servings with left overs.
