Veganomicon Lower Fat Banana Bread

2 very ripe, almost black (for best flavor!) bananas1/4 cup organic no-sugar-added applesauce1/4 cup canola oil1/3 cup evaporated cane juice or sugar in the raw (or just regular ol’ sugar) (I used Splenda)2 tbsp molasses (didn't use)2 cups flour (I used whole wheat)3/4 tsp baking soda1 tsp cinnamondash of nutmeg1/2 tsp salt
1. Preheat the oven to 350. In a large mixing bowl, mash the bananas til smooth with a fork. Add the sugar, applesauce, oil and molasses and stir well.
2. Sift in the flour, baking soda, salt and spices. Mix until just combined (don’t overmix this).
3. Pour batter into prepared loaf pan and bake for about 45 minutes or until golden brown
