Scale. large skillet, plastic cutting board, chopping knife, paper towels. whisk, tongs, measuring cup & spoons, serving spoon, large baking dish, aluminum foil, pot holders1 large pkg.(4.53#'s) boneless & skinless chicken breasts. 2 Tbs. extra virgin olive oilSpray Canola oilMcCormick, "California style" garlic powder2 Tbs. whole wheat flour.1 &1/2 cups of water salt PepperSage 2 Cups Grated Mozzarella cheese, part skim milk.
Wash, trim, weigh & cut the chicken into 5 oz. pieces. Smaller cuts will weigh about 3+ oz.'s.Set to dry on paper towels. Brown in a large skillet with 2 Tbs's of extra virgin olive oil. Turn as needed. Remove to doubled paper towels to drain off excess oil. Spray a large baking dish with canola oil ( 2-3 seconds), add the browned chicken and sprinkle with garlic powder, (carefull, it comes out fast!). Cover with foil and bake 40 minutes at 375` F. Stir in 2 Tbs's. whole wheat flour to the drippings in the skillet; while slowly adding 1 cup of water (or milk, cream etc.) As the gravy thickens adjust the amount of water you need. Sprinkle in salt, pepper & sage to taste. When the chicken pulls easily with a fork and is white inside; spoon the gravy over each piece (moving them close together) and add grated cheese on top. I used mozzarella, part skim, and browned it under the broiler.
