Quinoa Protein Bars

Ingredients

3 cups quinoa flour1/2 c toasted almonds1/2 c toasted coconut1 c raw sunflower seeds1 c natural pumpkin seeds3/4 c whole flax seed22 oz almond butter24 oz raw unfiltered honey
Combine dry ingredients in a large bowl. Combine almond butter and honey in a saucepan. Stirring constantly with a whisk, heat on medium low until a soft boil. Continue to boil for two minutes. Reduce heat and continue to stir until mixture releases from sides of pan and starts to follow whisk around the bowl. Remove from heat and pour over dry ingredients.
Mix together until soft balls can be formed. Press into greased cookie sheet 12x15. Makes 30 1.5 x 4 inch bars. Wrap in plastic to keep fresh
