Luis' Spanish Rice

Ingredients
250g brown Basmati rice6 boneless chicken thighs 9 mini chorizo1 onion, diced3 cloves garlic, finely slice1 red chilli1 red sweet pepper, dicedSaffron1 chicken stock cube500mls boiling water1 tbsp olive oilSalt & pepper to taste
Directions
Boil water, drop in stock cube & saffron then set aside.
In a deep pan gently cook onion & pepper in the oil. Add in the chicken.
Then add in mini chorizo & garlic.
Finally add in the warm stock & rice and simmer for 0 mins.
Season to taste
