Stuffed Bell Pepper

Ingredients
1. One whole green bell pepper2. 4 oz Ground Chicken (or Turkey) 3. 1/2 cup Stove Top Stuffing (or Brown Rice)4. Small Can of Tomato Sauce5. Olive Oil Spray
Directions
1. Cut the top off of the green pepper. Try to cut right under the stem. Take out the middle and rinse the inside and outside of the pepper. Set aside.
2. Brown the ground chicken (or turkey). There isn't a need to season the meat because the tomato sauce and the stuffing will add the flavor.
Once browned, set aside.
3. Prepare the stuffing (or brown rice) as directed.
4. Preheat the oven to 400 Degrees.
5. Mix together the ground chicken and stuffing. From there, pack in ground chicken/stuffing mix. Top with 3-4 tablespoons (or as desired) of tomato sauce.
6. Spray Olive Oil on top of the tomato sauce.
7. Place in the oven and bake uncovered for 20- 25 minutes (or until bell pepper have softed a bit).
8. Enjoy!!

    When using brown rice, as I did, add seasonings: basil, salt, etc. Using ground turkey breast makes this a great low-fat meal. Half the pepper was plenty for me. - 8/29/08
