Vegan Black Bean Brownies

3 T ground flax1/2 c warm water1 15-oz can of organic black beans, drained and rinsed1 packet Starbucks Via instant coffee3 T coconut oil, melteddash of salt2 t vanilla1/2 c agave nectar1 1/2 t baking powder3/4 c vegan chocolate chips
Preheat oven to 350*. Lightly grease 12 muffin tins.
Prepare the flax egg by combining flax and warm water and set aside.
In a food processor, combine beans and coffee until smooth. Add the oil, salt, vanilla, agave, and baking powder. Blend until smooth and combined, scraping the sides of the food processor in between.
Add chocolate chips and pulse a couple times to combine.
Pour batter into muffin tins. Bake for 17 minutes.
Let cool for 30 minutes in the tin before removing.
