Quinoa Stuffed Peppers

Ingredients
4 green bell peppers, ribs and seeds removed1 can diced tomatoes, no salt added1 cup cooked quinoa1/4 cup Tabasco sauce1 egg white1 can no salt added sweet corn1 can low sodium black beans1/4 cup shredded taco cheese
Directions
Combine all ingredients after diced tomatoes in bowl, mixing well

Stuff mixture into peppers, rounding the top

Place stuffed peppers into crockpot

Top with diced tomatoes

Pour 1 cup water or broth in bottom of crockpot

Cook on low for 6-8 hours
