Quinoa Pizza Bites

Ingredients
1 cup Quinoa1 cup cherry tomatoes0.5 red onion1.5 cups of red kidney beans1 tsp of garlic powder (or to taste)1 TBSP of dried Basil 1 tsp of oregano (or to taste)2 large organic eggs2 cups of water
Directions
Pre heat oven to 350 degrees.

Cook the 1 cup of Quinoa with 2 cups of water. Wait for it to boil and then cover for about 15 minutes until all the water dissipates.

Chop onion and sautee until translucent.

Mash the kidney beans with a potato masher or fork

Mix all of the ingredients together with clean hands until well combined.

Grease 3 mini cupcake pans and scoop mixture into them packing them in slightly,
