Adventures of the "Home Sick" Lady - Lasagna Soup

Ingredients
2 cups of unsalted vegetable broth (or whatever you have handy) 1 Medium Onions, rough dice1 tbsp Olive Oil1 cup of your favorite spaghetti sauce (I used Lucini Rustic Tomato Basil Sauce)About 1/2 of a large can of Whole Peeled Tomatoes (about 2 cups)Garlic, 4 cloves (minced)5 oz of Chopped Frozen Spinach3 oz of Bel Gioioso (Fresh Mozzarella Pearls) (diced, used for topping)1/2 Cup Kraft - Italian Five Cheese blend (or regular Parmesan)1 health bunch of fresh Basil (chiffonade)Salt & Pepper to tasteYou can use any meat you like.. I used homemade mini Turkey Meatballs (about 8 oz total)
Directions
In a medium pot, saute the onion in the olive oil until slightly translucent, add remaining ingredients and simmer for about 30 minutes.
